2007 Howard Park Abercrombie Cabernet SauvignonFor those with a taste for good wine, one to try from the Howard Park wines of Western Australia is the 2007 Howard Park Abercrombie Cabernet Sauvignon is a wonderful option. This is a purple rimmed opaque red wine and it’s region is Margaret River 9% and Mount Barker 91%. This blend leads to a unique nose, which is filled with cedar, chocolate, black currant, and ripe blackberry.

The structural backbone of this wine comes from the fruit parcels and the aromatics of the wine is lifted by the component from Margaret River, which adds some complexity and depth to the taste of the wine. This is a full bodied and rich wine with a powerful fruit taste with a finish that is persistent and you’ll find tannins that are fine and layered as well.

When it comes to the 2007 Howard Park Abercrombie Cabernet Sauvignon, the development of the fruit used in this wine is unique. During the later part of 2006, the region where the grapes were grown were dealing with dry conditions after a winter that was poor. The soil was not hydrated well, and the cold conditions decreased fruitfulness. Then there was a mild winter, which provided a budburst that was early, leading to many shoots that helped to keep down the pressure of disease. The season was one that was very early, and the ripening was quite even and early and the harvest of these grapes was done three weeks earlier than usual. The light crop lead to a compacted intake. The grapes were picked by hand, then sorted, then fermented to create this wine.

With supple tannins and a fruit depth that is excellent, this is a powerful wine that will stand alone. When it comes to cellaring, this is a wine that could use about 8-10 years, or even more, or maturation under cellaring conditions that are ideal. It is definitely a wine that is sure to only get better with time.
